My recommendation is the NPZ as it has lowered contrast and the fourth dye layer to tame the weird lighting you will meet in the various rooms. In the exact situations you mention I typically run something like 1/30 at 2.8 unless someone is running a spot light. Typical classroom lighting runs 1/60 at 4 assuming 800 speed film. Why not the usually good Kodak emulsions? Their 800 speed is not as crisp, has more grain, and doesn't do as well with mixed lighting. Also, the Fuji's tend to be cheaper. I second the suggestion that you take something longer. I think that 90 to 135 will be very useful focal lengths to isolate a speaker or a work group. My shooting in academia almost never lets me get close enough to utilize a 21-25 unless it is in a question and answer session where I can get close to the questioner.
