Saturation drops like a stone once the expiration date passes. It is pretty incredible how much old out of date Ultra 50 gets on the black market though - $10 a roll or more. The price of rarity. I'll post my findings with Ultra 100 for those who care. I used to load Ultra 50 in my Leica Mini 3 and get incredible results. That lens has a lot of fall-off on the edges, and the Ultra 50 just got more saturated - - cobalt skies and incredibly deep foliage colors...
