I too live in the UK and have never heard of hard-cooked eggs, though I 
imagine Mrs Beaton might know what they are.

Dare I suggest, Marc, that your brusque "I know more about English egg 
language than you English people do" manner may also be the reason you had 
trouble getting your steaks cooked properly?  Oops, looks like I did just 
suggest it!  I've never had a problem ordering rare steak, here or in 
Ireland.
