In fact, Southern folks do not like zucchini, as it has very little taste. I'd never seen one until I was nearly 20 years old. Nope, the yellow kind, fresh and tender, steamed just right, is the ticket. No beating any of those little yellow jewels to death! Remember, beta-carotene!
