Lately I've seen rates in the Boston area from $750 to $3,000 and up. The low gets you a CF card's worth of printable images on a CD. $1,000 gets you a lot more shots and some small prints. The higher prices get you a lot of proofs and later two small, and one large album. I know of one photog who supplies about a thousand proofs on a DVD, (I'm not kidding) in their $3,000 package. And, as you indicated, wedding photographers are getting booked up pretty quickly for spring weddings. I don't know if I have a solution for you and time is getting short. You might approach one of the wedding photographers you have already contacted to see if they would consider shooting the wedding with a digital camera supplied by you... or, get that step father to do it! To me, the worst part of doing weddings is the printing... every wedding with prints/albums is a 40+ hour proposition. So, a pro might be interested in doing nothing more than shooting yours, because it would be quick money Depending on your location, you could rent a D1X for a day, (about $100.00 here) and have the "pro/step dad" shoot the pictures, then you could take care of the printing yourself. I think that your disposable idea will generate very few good pictures, most with red eye and "flashed out" faces, and any shots of the bride will feature a washed out wedding gown with no texture. My sister put a disposable on every table at her son's wedding and was very disappointed with the results. In the end she was very happy that the bride's family had hired a wedding pro. What you want is someone with the experience and "eye" to get good wedding photos, and a camera that's up to the task.
