It is similar to the stickers on my Givi motorcycle top case: do not exceed 120 km/h and do not put more than 3 kg in it. I routinely disregard this weight limit, and so does everybody else I know, and I am sure Givi knows it perfectly well and builds the cases to take 10 kg. The ridiculous 3 kg limit is just to protect themselves from liability. The only airline I have seen implementing the one-piece and 5 kg limit for carry-on with anything approaching consistency is Easyjet; the other ones I fly frequently--KLM, Transavia, Iberia--have never weighed my carry-on. The possibility of ordering stuff in the Schiphol shops for pickup on return is most likely motivated by the desire for higher sales than any safety concerns.
