I don't remember where I saw this but I did read a study suggesting
that the act of trying to communicate on a phone is the real
hinderance to driving and using the one hand had very little to do
with one's poor driving.  I think it makes a good bit of sense as
there are an equal amount of dorks on the road driving poorly and
appear to be talking to themselves.
