I would only add the antiques/junk market in the El Rastro area on Sundays (I think it is on Sundays). But aside from Madrid, if Gabby has a day or two to spare, she can take advantage of the excellent AVE high speed train and go down to Seville for a day. Hotels down there are cheaper than in Madrid, as is the food, and it is a wonderful city. The train from Madrid takes 2:25 hours to cover the 550-600 km and there is one every hour. If you think she might be interested in something like that, let me know and I will send you Seville tips and some links off-list.
