Take a Leica M or, if you have it, the Hexar stealth camera without flash, some rolls of HP5+ (ISO 400 to 1600 pushable), the fastest 35 or 50 lens you have, and put it in your pocket. Let the pro photog do the "official" photos and wait. Don't make any photos until he is starting to pack in his gear and the people has had a few drinks. No one will notice you (may be except SWMBO), and these candid shots will be much, much funnier. I have done that a year ago and it worked very well.
