Regarding the ham, Bob Baron on the LEG sent me a link to an article
in NYT which describes this ham perfectly:

Everything they say is true. The ham I bought was 90 EUR / kg. So it
is certainly not a cheap indulgence, but it is a special treat and
worth every cent.
I do not recall country ham in Florida. In general, I enjoy Southern
food, whether a pit BBQ or Louisiana stuff. But this Spanish ham from
the black pigs in Extramadura is really something special.
