That's part of the special magic of scrapple.  It's pre-breaded -- toss
it in your nice greasy hot skillet and it crispens on the outside as the
mixed-in starchy part fries up almost as if you'd dredged it in
breading.  I thing that may be related to one of the downsides, as well,
though -- the way the middle part can look kind of grayish.  So just
don't look!
