You'll need a lens with known significant correction problems to conduct the experiment. I'm biting my tongue ;-) ;-) To the best of my knowledge only the White balance data is encrypted in the NEF format. Very likely we have some software experts in our midst who can correct me if I'm wrong there which is quite possible. I've seen DNG metadata dissected in some detail on the L Camera Forum list. This was in support of designing lens correction software. It starts to get complex when addressing which Raw files metadata conforms to which standard. In the case of DNGs the standards are not completely prescriptive. DNG1.2 is the preferred standard. I can only comment that the M8 files work perfectly with Adobe's software. The lossless compression added is very useful. Typically my DNG might be 5 or 6MB now instead of the 10MB from camera. So maybe 4GB of archive space saved per 1000 shots which is a useful bonus.
