Desert Arabs make "fatir," griddle cakes from rolled dough, as thin as
Breton crepes, eaten as breakfast together with fresh goat cheese. On
special occasions the cakes are torn up and mixed with clarified goatsmilk
butter and roasted young watermelon. This is called "fatta."
