Then the same goes for film. An 18% gray tone is an 18% gray tone
whether it be red, green or blue or any combination in between.

The loss of 2/3 of the data doesn't make sense though because all the
colors have luminance values. It's not as if a whole channel is being
thrown out. The luminance is retained and the chroma removed. Sure, the
chroma IS lost but that is the nature of black and white photography,
to not show it.
