A friend of mine, also a former Mungo Park photographer, usually takes a
4x5, M6 (w/24/35/90), and EOS1n (w/75-300 IS zoom and 85 1.4).  He mostly
shoots with the M6 and leaves everything else in his pack or car, as the
case may be.  He hauls out the EOS1n for action and shots where fast
handling is required, and the 4x5 for ultimate landscapes.  He also carries
a little Sony DCR-PC10 digital video camera, which doubles in as a DAT
recorder.
