I cycle with cameras all the time but only small amount of gonzo off-road
riding. On road and mild trail I carry the gear in a small fanny pack
(LowePro Sideline Shooter) in my panniers. As the riding gets rougher, the
panniers come off and the fanny pack goes on my fanny. In really gnarly mad
cap downhills the cameras come off (as I do frequently)and are put somewhere
safe (unfortunately where I usually put myself leaves something to be
desired). In general riding (not too crazy) a fanny pack is best as the
body/bike takes the edge out of most bumps. In really crazy riding you have
to decide: Am I photographing or riding?
