For generally 'sharp' landscapes with cameras that don't have movements,
use the hyperfocal distance. For critical work, I tend to close down two
stops or so from the DOF scale on lenses, shading the actual focus in the
direction of infinity, as the eye tends to be more critical of sharpness in
farther objects.
