Peter,

Aside from the web sites posted by other LUGgers, here are some books you
might consider:

"Real World Scanning and Halftones" by Blatner, Fleishman and Roth
"Real World Photoshop" by Blatner and Fraser
"Adobe Photoshop for Photographers" by Evening

I am not including any edition information, because I am assuming that at
least the last two have been updated for Photoshop 6, and I have the books
for PS 5, but you should easily find all three books on Amazon. The first of
the books is not Photoshop-specific, the other two are, but even then they
contain much useful information even if you use another image-editing
program.
