Something simple and mechanical.  Great starter cameras include: Canon
FTb/ql; Nikon FM; Pentax K1000.  Personally, I'd go with the Canon, because
FD lenses are mostly very good and very, very affordable (read: he can drop
them, lose them, etc. and you won't get too upset) and plentiful.
