Thanks so much for your comments, From the moment I picked up Fisher's
book, I was hooked.  I cannot give a higher  recommendation to any
cookbook.  Many of the others are also good reading; giving the
history of a food, makes it all the better.

I lived in New Orleans for many years, and an amazing thing;  when you
are out with friends eating at a fine restaurant, much of the
conversation  relates to other restaurants.

Speaking of restaurants, is Nick's at Yorktown still a great place?  I
have fond memories of going there when I lived at Tabb.
