Slow B&W - Fuji Acros - (have a brick, haven't had to shoot any yet.
Medium B&W - Tri-X at 400
Fast B&W -   Tri-X at 800
Faster B&W   Tri-X at 1200-1600
Ridiculous B&W  Delta 3200 at 1600 or 3200

Color Negative - What ever moves me at the time.

I rarely shoot color print film....last I used was Fuji 800 and was 
impressed mightily.
