Having looked at a standardized print sample book (nominal exposures, 
paper grades, etc.), it looks to me like that APX 100 is actually the 
closest thing to VP120.  It has to be shot at 64 to get equivalent 
shadow detail,  but it should make a decent replacement.

The highlight separation issue is visible even in smaller enlargements.

VP was not overly sensitive to blue; it is a pure pan film from the 
50s.  The original Verichrome was an ortho film (it's in some of my 
Mortensen books), which was, if I recall, a 32-ASA film.  So if the 
subsitute is blue-sensitive, it would have to be something of an 
atavism.
