Clive,
In spite of Marc's experience I found that the right word for a Medium Rare steak in Ireland was "Medium Rare" .  During the better than two weeks that I was in 
Ireland I must have had steak at least 8 times and 7 of those came out  what I would call Medium Rare.  This was everywhere from hotel restaurants to small out 
of the way Pubs. The only one that wasn't medium rare was medium, I rarely do that good here in the states. BTW the best steak that I had was in the Creamery 
Pub across the street from Bunratty Castle just outside of Shannon.
