As far as I remember Martin never blames the cameras for missing anything.
He does mention that during most of Muddy Waters "Manish Boy" all camera
men, but one, was taking a well deserved break, it was a mistake in the 
communication that that happened.

To me it sounds more like Jay is saying
"I work(ed) for Panavision, our product _never_ breaks, and if the director
says they did he must have done too much coke"
