Tabsco is for breakfast. I make my own chilli (sambal) paste with small 
orange chillies from Madagascar, which I can buy in a african speciality 
shop downtown. Forget every central-american and asian chilli. Boil a 
handful together with one garlic for 1 minute, add salt, some herbs, a drop 
of olive oil and vinegar, and mix it. This one beats all. Even my 
brother-in-law, grown up in southern India (where heaven knows the curry 
isn't mild), is passing on it...
