Smoked. And there are many fishes that can be smoked. Some of the others 
ones I prefer, actually (Mackerel melts in your mouth, I'm burnt out on 
smoked salmon (don't want all the anti-biotics), something called "sik" 
(gwyniad : http://www.first-nature.com/fishes/coregonus_lavaretus.htm ) 
and many others (even cod, but I'm not too fond of smoked cod).
