Well you asked for it. So here's my infamous Beefsteak Ranchero recipe. If
you can fog a glass you can cook this.

Season 2lbs of lean steak (all fat strips removed) with Cholula sauce or
Cholula 'Original' Dry Seasoning. Set steak aside for 20 - 30 minutes at
room temperature.

Heat a couple tablespoons of vegetable oil (I use peanut) in a 12" skillet.
Fry the seasoned steak for 4 minutes per side. Remove steak and allow it to
rest for 5 - 10 minutes then cut the steak into long strips.

Deglaze the fry pan with white wine or sherry, allowing the scrapped and
recovered drippings to remain in the frying pan. Add 1 10oz tin of Rotel
original or mild tomato/chilli pepper mix plus 1 28oz tin of roma tomatoes
prediced spoon size.

Reheat fry pan on medium low, add steak strips, 1/2 cup of water or beef
stock, salt and pepper to taste (I use 1/2 tsp salt, 5 grinds of my pepper
mill).

Stir well and reduce temperature to low, cover to simmer for 2 to 3 hours.

Optional: Add 3 medium potatoes cut into cross way strips. You can precook
the potatoes and then slice them into the fry pan for 30 minutes or cook raw
potato slices for 1.5 hours with the steak, chilli and tomato.

Serve with hot tortillas.

The above with potatoes is cooking for tonight?s dinner here.

Regards,

Greg
