Thanks for the comment, the boudin is ground lean pork, and spices,  mixed 
with rice and stuffed as a sausage, then it is slow grilled,so most of the  
fat 
is rendered  away.

The  scallops wrapped with bacon are also grilled, and it takes a little 
balance to  make sure the bacon is crispy and the scallops not cooked to 
mush.  It 
 probably has a fairly high fat content, but it certainly isn't greasy
