I'm definitely looking for a certain "look" that I haven't been able to get
with modern lenses (and their coatings), modern films, and modern "general
purpose" developers. But some film/developer combinations are exactly what
I'm looking at for certain applications.

TRI-X and 777 - portraits
FP4+ and PMK Pyro - general purpose (but too slow for most street
photography)
Acros and Prescysol - fine detail (with a tripod)
