My advise would be to open discussions with publishers. You have more  
than one book ready for several publishers. I'm quite sure that you  
have at least two books. One for photographers (with both aesthetic  
and technical - behind the camera stuff) and one for the birding  
community. I suspect that you could easily supply the text for the  
"photographer" version and that version would also have birding  
content (as it seems you've done your homework in this regard). The  
"birding" version may require that you bring a birding writer into  
the project.
