You want to import it into either iMovie or FCP as DV.  They make
interfaces like this (RCA->Firewire) and the Pinnacle might be one.  I
don't know.  You can often use a mid level DV camera to do this to.
You just plug the Hi8 camera into the DV cam's RCA inputs and then
capture the DV stream on your mac.  Not all DVD cameras can do this
but many can.

Once you are in iMovie/FCP with your captured DV video, make your
edits and then export it to DVD.
