They are almost the same ingredients, but scrapple is finer ground 
than head cheese.  Head cheese still has almost identifiable chunks in it ;-)
Scrapple also has a filler like cornmeal.  Head cheese is just the 
meat and spices cooked and cooled until it jells.

Both are delicious!
