Actually, it is the more you cook grains, or any food for that matter,  the
easier it turns to sugar. Again, the more it is processed, the quicker it
turns to sugar - the glycemic index of refined flour is almost as bad as
white sugar! There is a very sound reason to include salads and fruits in
your diet!
