I when I shoot film I shoot color neg 800 films. Fuji or Kodak whatever
they've got. Most the R&D was focused in the past 20 years on color neg
film. Other types of film got the dregs. Black and white. Chrome. Very
little market share.
The 800 films of the current era performed like the 200 films of the 60's
and 70's. They are truly a dream come true.
I like all the color information in the scan so in the end its not that
different from a regular digital capture. You can filter on the fly when
making a conversion to black and white so each shot gets tweaked to
perfection.
So I do think the best way to shoot black and white is with color film.
Movie people feel this way too but the other reason is they cant get good
B&W processing any more.
Schindler's list was shot with color neg.
