A side trip to Pitigliano would be high on my list:

If you rent a car get full insurance coverage and be prepared for traffic 
tickets - both speeding and parking -
about 3 - 6 months after you get back to the States. 

When the Germans were retreating in WWII they took down most road signs to 
confuse the
pursuing Allied troops and many of them have not yet been put back up so 
please drive the side roads 
with a sense of humour and some scepticism about the GPS instructions.

Good travels - Italy is one of my most favourite countries - I love the 
people, the history, the scenery, the wine and the food.
