Use Nik Silver Efex Pro, and buy Jason Odell's guide for it - this is
concentrating on one piece of software, but the industry standard.

The Vincent Versace book that Steve mentioned, From Oz to Kansas is good,
and concentrates on digital post processing conversion techniques.

A last one, more philosophical than the other two is "The Essence of
Photography" by Bruce Barnbaum
