I stick with film and developer combinations that are easy, repeatable, 
and give me the look I'm familiar with. This means Tri-X in HC-110 (1:31 
dilution from the concentrate) for a fine-grained, full tonal scale 
appearance, Tri-X in Rodinal (1:50 dilution) for a sharper and grainier 
appearance, Plus-X in HC-110, Rodinal and Rodinal with sodium sulphite 
addition for much the similar reasons. Agfa APX25 for extremely fine 
grain and so I can open the lenses fully in sunlight. Ilford XP2 for a 
very smooth, almost grainless image with long tonal scale and subtle 
gradations, at the expense of a little bit of sharpness. 

I don't do much wet lab printing anymore, my negatives are scanned 
directly with a film scanner and manipulated digitally, then printed to 
an Epson Color Stylus Pro inkjet printer.
