The best way would be to look at their work and meet them.
But you do do the "you took these pictures?" and "you will also be shooting our
pictures?" routine as it is so popular in the cruel world.

Realize that every picture they show you is edited out of two million. They are
amazing flukes from hell. He doesn't remember shooting them and could never
reproduce it in a million years. 
But what the hell!
And if the double exposure star bursts is what you want, and that is what you
are looking at, that is what you are going to get.
Don't ask him not to do his favorite money maker! You'll hear his teeth grinding
the whole wedding!

Don't hire a person (artist?) to do what he does not do.

Hire an artist for what they do do, not for what they don't do. (I love this do
do stufff!)
If they love the shlock but have "reportage" as an "option" don't fall for it.
Sure they are capable of shooting an un posed shot.
If that's not what he is in default auto pilot generally going for that's going
against the grain for him to try to do it.
