In answer to your question, it depends.  If what you are photographing is
approximately middle gray then whatever floats your boat.  If you are
shooting into the light then you either need to be good at the zone system
using the spot meter and exposure compensation or meter a middle gray,
exposure lock, and recompose.

Really, shoot a few rolls of chrome trying various metering methods and find
out what gives you the results that you want.
