I would expect the same high quality from both. If you're in the US, you
might want to favour New Jersey. I don't know what the customs regulations
are like, but you might end up paying a premium on work done outside the
US and you could avoid that kind of paper-work by relying on New Jersey.

The other way around ... sending something from the EU to be worked on in
the US is a killer ... we (Swedes) pay 1) 4% duty and THEN they add 2) 25%
sales tax to the invoice from the US. A real racket.
