Cocoa is a programming API for Mac OS X that is its native API. Most people
don't realize that Carbon is also a native API for OS X. But the difference
is, some services available to Cocoa applications are not available for
Carbon applications. Cocoa comes from NeXT, Steve Jobs previous company that
produced über-cool black, cube computers, and operating system that was
popular with a few small niches like education and Wall Street. Cocoa can be
programmed either in Objective C (from NeXT) or Java.
