Yesterday had not enough time to answer the anna question so here are some
links .
Note there are many poor recipes on the net.
This one comes close to the original

it results in a rather shallow mound of potatoes.
When done right the end result is a high golden potato cake.

One of the important tricks is not to wash the potatoes after slicing and to
dry them thoroughly with paper towels.
Also you need to use clarified butter.
Then the starch causes the formation of a cake.Even though the receipe calls
for a large amount of butter one should be able to pour most of it out of
the pan upon completion.
Traditionally it is served together with a saddle of lamb roughly everything
between the pelvis and lower ribs rolled into a nice shape.
