Watching "Long Way Round" may give you some ideas. I've been wanting to see 
Mongolia since watching 2 guys on bikes drive through 
it.

The horse races and wrestling matches are featured.

Globe Trekker on the Travel Channel has a Mongolia special on sometimes.
