G?nter Wand is definitely the best for Bruckner:
My favourite Mahler interpretations are by Eliahu Inbal and Rafael Kubelik.
If you can find it, Orff's Carmina Burana is superb with Lucia Popp,
John van Kesteren and the wonderful Hermann Prey.
With the chorus and orchester of the Bavarian Broadcasting Company -
conducted by Kurt Eichhorn.
This is the version authorised by Orff himself, and is also available as
a film version from Jean-Pierre Ponelle - absolutely brilliant!!
Frau Popp is also wunderbar in Sinopoli's Brahms Deutsches Requiem along
with Wolfgang Brendel

On another tack completely, and unfortunately only on CD - I'm rather
fond of French composers of the 19th and early 20th Century and I
recently discovered a gentleman who went by the name of Louis James
Alfred Lefebure-Wely, the most glorious organ music I ever heard - a
mixture between the Mighty Wurlitzer and Cesar Franck with a touch of
Poulenc's humour, or perhaps an organ version of Louis Moreau Gottschalk.
Try here for a sample:
