Steve,
I set exposure not to blow out highlights, hence the -2/3 stop I always set
(even when using Nikon's Matrix Metering) - shadow details can be coaxed out
in post processing. Once you have the digital capture without blown
highlights, you can play with it in your RAW processing software to get the
exposure of your choice. I find that a range of as much as 1.5 stops either
way is usable.
