Tina,
On my calibrated monitor it looks too contrasty. Maybe you should dial down
the contrast while scanning to get a flat scan, and then do the adjustments
in post processing. Post processing software, like Photoshop, tend to be
far more capable of subtle adjustments than scanning software. Another
thing you could try is to get the scanned output as a TIFF file, and take
it straight into Photoshop, therefore eliminating one layer of adjustments
in ACR, which I presume you have to do when getting a scanned output in the
DNG format.

If you start with a high contrast scan, the end result will always look
over processed, there is no getting away from it,  in my experience.
