The easiest way is to convert from RGB to Grayscale....  If you are going to
print it off on an Epson Photo Stylus printer etc.... you will get better
results by immediately converting it back to RGB.... this will give you more
continuous tones as opposed to dots...  I generally will make an adjustment
layer of levels or curves depending on the image and adjust those till it
looks like a B&W print should...

I've used Duotones and Quadtones... and monkeyed around that way...  but if
it is easier to just convert it from RGB to Grayscale and back to RGB right
away, adjust curves and use the color balance to shift tones if needed...
