In the Epson system, you have to match your inks and papers to avoid color
casts in B&W.  I have found that the Premium Lustre comes out a little
magenta but then metamerizes into a very nice just neutral print.  Also, the
glossy paper made for full bleed printing on the 1280 up dries down to a
very nice B&W image.

If you venture away from those papers then you will have to create an
adjustment layer in PS to eliminate the caste.  You absolutely can not just
adjust the color balance of the main image as the color you see is a result
of the dyes in the ink and not a fault of the file.

So, create an adjustment layer, fill with color that will neutralize the
cast, and adjust the opacity until the print is to your taste.
