I don't think that a rangefinder is especially suited, but a system with shifts and tilts helps a lot in composing what is seen, in the image but subtle, and what is not seen. If you mean the preparation of food then a rangefinder works very well indeed. As to the meat itself, I am somewhat at odds with myself. With red meat, I either like it raw sliced very thinly, or smoked until it is falling apart. I have only found a few places that will take enough time and care to do that. The last place was in Greenville, Mississippi and I think they were closed by health concerns. As an aside, when I was in a Japanese traditional restaurant, the waitress had a hard time with this stupid American who did not understand that the thinly sliced beef was supposed to be cooked in the steaming broth, not eaten raw. :) At home I use a "Big Green Egg". This is a large, heavy ceramic smoker allegedly inspired by ovens used by the residents of Japan. In any case, you can hold a moderate temperature most of a day and with the proper choice and mix of charcoal and wood you can imbue the meat with a luscious taste. Regarding catfish, I don't seem to enjoy it now that most catfish comes from farms and is corn-fed.
