In southern California, they are either crayfish or crawdads, and they
are definitely just bait until you get down into the southern states.

Noticed that someone else called them crayfish....As a kid on the south
side
of Chicago we would use a net to pull crayfish off the breakwaters on
Lake
Michigan, using them the next morning for bait...
